The Allure of 26.2

Take a look at this beauty!  Whole grain penne pasta, broccoli, sundried tomatoes, goat cheese, and pan seared tempeh.


The girls had a similar version except they opted for lemon pepper grilled chicken instead of the tempeh.

I loved it but everyone else just gave it a “meh” rating.  Oh well, I hope they know that it was made with all my love and that it makes me happy to prepare healthy meals for them.

Here’s the full recipe if you’d like to try it.  The only changes I made were the additions of the goat cheese and tempeh.

On the running front, I’m ready to announce that in 182 days I’m going to give the full marathon a try again.  I’ve registered for The City of Oaks Marathon here in Raleigh and I’m so excited.  I started running when I was 45 and in that year I ran 2 half marathons and 2 full marathons.  My 46th year has been a struggle trying to get over a foot injury and just trying to get back in running shape.  I have enjoyed some great 5ks and the awesome Flying Pirate Half Marathon but the full Marathon keeps calling my name.  I’ll be turning 47 in a few weeks and I’m hoping that this will be my best running year yet!  I might join a running group and try out the Galloway method.  Who knows?!  Whatever I do, I do know I REALLY want to become a morning runner.  I’ve tried and tried before but I still slip into my afternoon and early evening running patterns.  This is just not productive for me anymore.  I’ve got to change!
