Twenty-three

For 22 years and 9 months, I was Missy Dickenson.  For 23 years now, I’ve been Melissa Cupit.

Happy Anniversary to my wonderful husband, Ron Cupit!

Friday morning I had a bowl of Kashi and a banana.

 

For lunch I had some leftover TVP chili, some chip crumbs, and some grapes.

 

About a week ago, Ron casually asked me if I wanted to go to Asheville for our anniversary.  “YES PLEASE,” said I. 

He said, “okay then….plan it up.”  And plan it up I did.

We drove for 4 hours on Friday evening and munched on a healthy bowl of veggie chips that Ron had packed for us. 

 

We stayed at the romantic Hill House Bed and Breakfast in Asheville. 

Isn’t it just beautiful!

 

We dined in our room on a salad, bread, and cheese that Ron got from Kroger.  That salad looks like it’s nothing but lettuce but there was a boiled egg, tomato, cheese, red pepper, and cucumber hidden underneath.  The Ken’s Blue Cheese dressing that he got for us was out of this world.  I ate the entire thing!

 

For dessert, I hit up the bottomless cookie jar in the parlor.  The toffee bars were good too.

 

What a great day!

So excited to see what Asheville has in store for us!

Raisins for Gu

Woohoo!

This morning’s breakfast was a leftover waffle from Sunday and a banana.

 

I got work from home this morning and only had a late afternoon meeting at NC Bar.  I was able to work in my long run (10 miles) today because I knew I would end up working late.  It was glorious! I did my first 6 in 63 minutes.  Oh yeah!  The next 4 were a bit slower but still so fun! 

At mile 6 I snapped this self portrait and got my Madonna on.  (that’s code for getting a fresh oh so 80’s headband)  I didn’t have any Gu so I downed this handful of raisins.

 

Raisins were the perfect fuel!

After my run, I had this huge monster. 

 

And thus, I wasn’t hungry for lunch.

Tonight’s dinner was chili and basic tofu.

 

A spoonful of Dark Chocolate Dreams was dessert.

Have a lot still to do.

Ear Infection (not just for infants and toddlers)

Today was a sick day for Lydia.  This is how she spent most of the day except for the time we went to the doctor.

 

Fred is always her best friend when she is sick.

Diagnosis was an ear infection.  And a pretty bad one…  Hopefully the medicine will start working soon.

I am fever free so I should be ok.  Just a little tickle in my throat.

For breakfast I had cottage cheese, coffee, and a PB and banana English muffin.

 

Lunch was a tofu and caramelized onions sandwich.

 

I also had some peanuts when I was at Walmart picking up Lydia’s prescription.

Dinner was spaghetti and salad. 

 

Still up doing laundry but I’ll go ahead and say Goodnight Friends.

Roly Poly

Breakfast was an egg and jam English muffin.  Yummo!

 

I did pack my lunch today but I was invited out to eat with co-workers.  Has anyone heard of Roly Poly Sandwich Shop?

Wow!  I’ve really been missing out.  I had a Nut & Honey roll-up.  It had cream cheese, raisins, sunflower seeds, cashews, lettuce, spinach, tomato, carrot, avocado, sprouts, and honey mustard dressing.  I might, just might be able to recreate this sometime at home.

When I got home, I only had a minute or two before a band meeting so I ate the lunch that was in my cooler.

And….after the band meeting, some of these were inhaled.

 

Four weeks before my 2nd marathon is no time for this hectic, stressful, and possibly sick schedule to emerge.

Lydia is sick again and my throat is feeling funny.  We shall visit the doctor tomorrow for sure.  Lydia told me that she drank after one of her friends that had drank after another friend that just happens to have mono.  Why would she do this?  Haven’t I drilled into her the importance of not sharing drinks for oh let’s say about 16 years now?  

Back to basics tomorrow of making sure I am eating right and drinking enough water.  It is so easy to get off track even when you constantly know the right things to do for your body.

Multi-vitamin and off to bed for me.

Orange Julius

I didn’t have lunch until 2:30 or so today.  It has been crazy! 

I gobbled down this PB sammie and apple with cinnamon.  I actually put the apple on the sammie and it was so good.

Lyds got her hair cut and then we splurged and went to Golden Corral.  I had a huge salad, fried okra, squash, lima beans (oh so good), and a little bit of peach cobbler and a small slice of lemon cake.

I had a worship meeting tonight and when I got home, I was sorta hungry for some reason.  I decided to see if I could recreate an Orange Julius. 

 

One orange, 2 cups of skim milk, and one scoop of VANILLA  protein powder.

Looks like a glass of milk but I promise you there was a hint of orange to this monster and it was to die for.

“Ask and you shall receive”

Our Sunday began with waffles as usual.

 

So yummy!

After church, I worked on band things all afternoon and had an egg and avocado sammie.

 

It was so good.  I have a lot of ripe avocados right now.  I sure hope Ron will help me eat them.

Then went out for a run.  I ran 6 miles in 65 minutes.  Earlier this week I had run 6 in 66 minutes and was hoping to beat that.  I said a prayer while I was running and prayed for 65 and that is exactly what I got.  When I looked at my Garmin, I was happy but I immediately wondered what God would have done if I had prayed for 61 or 62?  Am I not praying big enough? 

After my run, I had a HUGE monster.  I drank every last bit of it.

 

It had 16 ounces of skim milk, frozen Yoplait bananas and strawberries, 1 scoop of vanilla protein powder (woohoo!), and two large handfuls of spinach.

Due to that fact, I was not hungry at all for dinner.  I did have a Boca chick sammie with cheese and spinach late last night but I didn’t get a shot of it.  

This morning, I had a bowl of Kashi, blueberries, and banana.

 

Hoping to stay productive today on my vacation day.

The Day Slipped by Me!

Where oh where can a day go so quickly? 

I got a little done with some band stuff and then headed out to get a present for my good friend’s daughter.  She turned 10 today.

We had a cookout and had a lot of fun.

Here’s a pic of some of the snacks I had.

Later, I had a veggie burger, pasta salad, beans, and potato salad.  I didn’t get a pic of that course because it was getting dark and flash pictures always end up looking awful.

Tonight I watched “The Social Network.”  It was sorta sad to me.  I wonder if at the end, his crush ever “friended” him?  Money does not buy happiness.

I’m so sad that I didn’t get more accomplished today.  It seems like if I ever slow down even for a bit, I just get farther and farther behind.

For tomorrow and Monday, I am going to stay FOCUSED!

New Mix-in

I slept ‘til 9:30 this morning!  Felt so good!

Then I proceeded to make this delicious bowl of oats.

 

I’ve seen people mix in cottage cheese in oats on the healthy living blogs I read but I’ve sorta been scared to try it myself.  I like cottage cheese an all (it reminds me of my mother who adores it with peaches) but something about mixing it in with hot oats made me leery. 

No worries were needed.  This is awesome!  I foresee cottage cheese becoming a regular mix-in.

 

Today’s recipe was:

1/3 cup old fashioned oats

1/3 cup skim milk (using it up and switching to alternative milks like my sister, Rosa)

1/3 cup water

½ mashed banana

1/3 cup cottage cheese stirred in at the last bit of cooking

1 tsp brown sugar

Sprinkles of cinnamon

Drops of vanilla

And topped with ½ sliced banana and Kashi granola

Wish I had put in 1 TBSP of flax seed but I forgot.

I’ve got a very busy weekend ahead and a long one.  I have Monday off.  It was supposed to be a school holiday but Lydia has to make up a snow day.

BINGO II

I started my morning with a micro-waved egg on an English muffin with blackberry jam. 

I left them apart for the picture but I closed the sandwich up for eating.  Very good.

For lunch, I had leftover pizza and a banana.  

I brought this hummus and veggies but I ended up not eating them until tonight at dinner.

 

Isn’t that single serving of hummus so cute?  Lydia and I love them.

I was in Fayetteville today and I needed to stop and pick up something for tonight’s Bingo cake walk.  Look what called my name!

 

I got two dozen for the band to put in the cake walk and this one for me.  It was a blueberry cake one.

After work, I ran 6 miles.  It was 75 degrees and oh so HOT.  I have gotten spoiled running this winter.  It made me remember the very hot training runs from last summer. 

After the run, came another pumpkin pie smoothie.  Delish!

 

Dinner was a bed of spinach with those veggies from lunch that I didn’t eat plus some cukes and raisins.

 

The dressing is a homemade one that is simply divine.  The best I’ve ever had.  It has maple syrup, EVOO, apple cider vinegar, balsamic vinegar, Dijon mustard, and fresh garlic.

I put that hummus on some toast and had the last of my rice, black beans, and Rotel mix.

 

Then it was on to BINGO!

I had some popcorn and water and had a lot of fun.

Lydia and I did not win any of the Bingo games and my cakewalk queen did not reign tonight.  The KK doughnuts were an absolute hit though!

With all the cakes about and me not getting one, I had a sweet tooth tonight and grabbed a Krunch Bar from the freezer when I got home.

Overwhelming!

I did great on eating today but I didn’t run.  I needed to but I just couldn’t find the time.

The best part of the day was the return of vanilla protein mix and its debut in my pumpkin pie monster.
